Lemon Based Chicken Casserole


2.5 cups condensed cream of mushroom OR cream of chicken soup (the equivalent of 2 cans)
1/2 cup milk
1.5 lbs. Yukon gold potatoes, very thinly sliced (no thicker than 1/8")
2 cloves garlic, minced
1 small white onion, peeled and thinly sliced
1.5 lbs. boneless, skinless chicken breasts
salt and freshly-ground black pepper
1 lemon, thinly sliced and halved (into half coins)
(optional garnish: chopped fresh parsley or fresh thyme)

Preheat oven to 425 degrees F.

Add condensed soup and milk to a saucepan and whisk to combine. Heat over medium-high heat until simmering, stirring frequently. When it reaches a simmer, remove from heat and set aside.

Wellington Beef Classic


For Assembly:
1 box puff pastry containing 2 sheets, thawed but keep chilled in fridge
4 thin slices of prosciutto
1 egg
2 tablespoons olive oil
2 (8 oz) filet mignon
2 teaspoons Dijon mustard

For Duxelles:
2 shallots, finely chopped
salt and pepper to taste
2 tablespoons parsley, finely chopped
4 tablespoons unsalted butter
1/2 pound mushrooms, very finely chopped

Brownies Chocolate Chip Cookie

For the Brownie:
4 eggs
2 teaspoons vanilla extract
1 cup all-purpose flour
4 ounces unsweetened chocolate, finely chopped
1 cup unsalted butter, at room temperature
2 cups light brown sugar

For the Cookie Dough:
3 tablespoons whole milk
11 teaspoons vanilla extract
11 cups all-purpose flour
11 cups mini chocolate chips
3 cup unsalted butter
3 cup light brown sugar
3 cup granulated sugar

1. Prepare the Brownies: Preheat oven to 325 degrees F. Line a 9x13-inch pan with foil, with enough to hang over all four sides. Butter the foil. In a medium glass bowl, melt the chocolate in the microwave in 30-second increments, stirring after each, until melted and smooth. Set aside to cool slightly. In a large mixing bowl, mix the butter and brown sugar with an electric mixer on medium speed until light and fluffy. Beat in the eggs and vanilla extract, scraping the bowl as needed. Mix in the melted chocolate until combined. Reduce the speed to low, add the flour and mix just until combined (don't over-mix). Spread the batter into the prepared pan. Bake 25 to 35 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.

2. Prepare the Cookie Dough: In a medium bowl, use an electric mixer on medium speed to combine the butter and both sugars. Add the milk and vanilla and mix until combined. Reduce the speed to low and mix in the flour just until combined. Using a rubber spatula, stir in the chocolate chips.

3. Spread the cookie dough over the cooled brownies. Refrigerate until the dough is firm, about an hour. Use a sharp knife or a pizza cutter (my favorite way to slice brownies!) to cut the brownies. Store the brownies in an airtight container at cool room temperature or in the refrigerator.

Steak Sandwiches - Beer Marinated


1 cup Guinness beer or other stout
24 cremini mushroom, stems removed
1 large red onion, cut into 1/4-inch-thick slices
2 Tbsp extra virgin olive oil
½ tsp kosher salt
freshly ground pepper to taste
½ cup finely chopped sweet onion
? cup reduced-sodium soy sauce
2 Tbsp molasses (not blackstrap)
1 Tbsp chopped fresh rosemary or 1 teaspoon dried
1 Tbsp minced garlic
¼ tsp Worcestershire sauce
1 lb boneless bison rib-eye steaks, 1 1/2-2 inches thick (see Tip)
4 slices rye bread, 1/2-3/4 inch thick

Slow Cooked Meat Loaf

½ tsp rubbed sage
1 ½ lb ground beef
¼ cup ketchup
2 Tbsp brown sugar
1 tsp ground mustard
2 eggs
¾ cup milk
? cup seasoned bread crumb
2 tsp dried minced onions
1 tsp salt
½ tsp Worcestershire sauce


In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well (mixture will be moist). Shape into a round loaf; place in a 5-qt. slow cooker. Cover and cook on low for 5-6 hours or until no pink remains and a meat thermometer reads 160°.
In a small bowl, whisk the ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over the meat loaf. Cook 15 minutes longer or until heated through. Let stand for 10-15 minutes before slicing.

Sweet Carrot Pancakes


2 eggs
? cup almond milk or regular milk
1 tsp vanilla
2 Tbsp maple syrup (plus more for serving)
? cup brown or white rice flour
1 cup almond meal
1 tsp baking powder
½ tsp ground cinnamon
¼ tsp ground nutmeg
½ tsp ground ginger
½ tsp salt
1 ½ cup finely grated carrots
Coconut oil, butter or Earth balance, for cooking
Vanilla nonfat Greek yogurt or crème fraiche, for serving

OXO Everyday Kitchen Tool Set are truly worth the money. the Pizza cutter and the plane grater are particularly helpful. The kitchen equipment in this set are all fantastic! good grips certainly! We got these because we have difficulty using some kitchen equipment, These are simple to hold and use,good looking, and are really well designed. They do what they are designed to do nicely without demanding much efforts.
It is a little tricky to fit all the tools back in the container as nicely as they came.
I've had these for a several months now and they are all still in outstanding condition and perform brilliantly! The peeler is the best we have ever had I had given up peeling potatos but have no problems now. The can opener is also great we all are very satisfied with OXO Everyday Kitchen Tool Set.
